VALUABLE PROPERTIES OF OIL CROPS

Sesame is also among the crops grown en masse in the north of Turkmenistan. It was placed here, like last year, on 350 hectares. Farmers of the region intend to get at least 10 centners of the harvest from each of them. They value oil crops for a short growing season, which makes it possible to use it in crop rotation, when sesame is placed after winter wheat and some other plants. Sesame is thermophilic and reacts well to fertilizers. It is rich in antioxidants, amino acids, proteins and vitamins and surpasses even olive oil in the content of individual components. Experts believe it contains more calcium than most foods.

The crop is mainly used to produce cold-pressed gourmet oil. In terms of taste, it belongs to the best edible oils. The cake formed during the production of oil is a valuable feed for animal husbandry.

Also, the seeds of the plant are eaten, used in confectionery and other branches of the food industry, in folk medicine. For example, sesame is an invariable attribute of the Dashoguz white halva made according to the old technology and some types of flour products.

Despite the fact that sesame seeds are cultivated in large volumes in the Dashoguz velayat only for the second year in a row, the culture of its cultivation in the region has a rich history, as evidenced by the preserved old home-made juvaz - small oil mills, and recipes for making pilaf and other dishes using sesame oil.
